Buy the best bird you can find

Only cook with top quality chicken. If you can’t find or afford free range, seek out some chicken that’s up to a high standard.

Brine the bird

It’s super important to brine your chicken for a few hours or overnight. This locks in the juices, so it stays tender after frying.

Season your flour

It’s really important to season the flour that you’ll be coating your chicken with. Avoid adding extra seasonings such as chilli powder and paprika, otherwise the coating will burn.

Invest in a fryer

Purchase a small deep fryer and set it to 180°C/350°F. Don’t muck around with a skillet or frying pan.

Rest the bird

Once you’ve cooked the chicken, allow it to rest. This will relax the protein strands so your chicken is tender and pleasant to eat.

Get your accompaniments right

To really set off your dinner, serve your fried chicken with a couple of the following accompaniments (all of which you can find basic recipe suggestions for online):

  • coleslaw
  • mac and cheese
