Recipe: citrus baked rhubarb

In the depths of winter, the arrival of bright forced Yorkshire rhubarb is a beacon of pink hope. Its sourness calls for a bit of sugar (or lots if you feel so inclined!) to soften, and the accompaniment of something creamy to act as an ally – give it a go with some yoghurt, crème fraiche or panna cotta.
Citrus baked rhubarb
Preheat the oven to 200°C (180°C fan)/350°F. Line a tray with baking paper, place the rhubarb on the tray, scatter with the sugar, add the vanilla pod and seeds, and drizzle with the juice from the orange.
Bake for 15-20 minutes until tender. Serve with Greek yoghurt.

amazing, I have been thinking it is time to look up some rhubarb recipes as it is spring here in New England and this is a must try, thanks.
