Recipe: maple glazed pineapple wedges

Barbecued pineapple is an oldie but a goodie. The mix of flavours is incredible –the tropical sweetness of the fruit blends perfectly with maple butter, flaked sea salt and the delicious caramelisation from the grill. Serve as a dessert with ice-cream and grated lime zest, or even add to a savoury salad or as a side.

Tips

  • *The cooking time will depend on the heat of the barbecue.
  • If you don’t have a barbecue, substitute for a hot grill instead. You just won’t be able to achieve that lovely smoky flavour though.

1 ripe pineapple

2-4 tbsp maple syrup

1 knob of very soft butter

Sea salt

Equipment

Barbecue

Light the barbecue and cut the pineapple into six wedges per half.

Brush the pineapple with butter and maple syrup. Sprinkle with a little salt.

Once the coals are at a red glowing stage (no naked flame) place the pineapple on top.

4

Turn the pineapple after several minutes (or once you have the distinct grill marks), and glaze with more of the maple butter mix.

Remove from the grill once the pineapple has grill marks on both sides.

6

Serve on it’s own or with a scoop of ice cream, blob of cream or squeeze of fresh lime juice.
