ingredients

2 tbsp olive oil

 

50g chorizo (or 1 small chorizo sausage)

Small handful of chopped shallots

 

5 medium sized eggs

 

45g (3-4 tbsp) scamorza

 

1 beef tomato

 

1 tbsp Greek yoghurt

Sourdough bread

Heat two tablespoons of olive oil in a pan.

Once heated, add the chorizo and chopped shallots and fry until the shallots turn golden.

In a separate pan, heat the eggs, add scamorza and start to lightly scramble the mixture.

Slice the beef tomato in half and place under a grill until cooked.

To plate the dish – place the beef tomato on top of the scrambled eggs, top with Greek yoghurt, sprinkle with shallots and serve with a slice of sourdough.
