Weekend eats: a waste-free menu for two

When the Khoollect editorial team asked me to devise readers with a concise shopping list that used up every last bit of fresh food,I jumped at the chance. Buying your vegetables from a greengrocer, so you don’t get roped into a buy one, throw-one-away supermarket offer. Not only does it work out cheaper from a greengrocer, but you can buy things individually rather than wrapped under cellophane, giving you much greater control over your food.

Weekend for two - shopping list

All recipes serve 2, so reduce or increase as required.

The menu:
Saturday
Breakfast: Potato and radish hash with crispy fried egg
Lunch: Carrot fritters with saffron yoghurt with fennel, cabbage and sprout slaw (hang remaining yoghurt overnight)
Dinner: Late spring vegetable stew with preserved lemon relish
Dessert: Rose water meringue mess
Sunday
Breakfast: Banana oat pancakes with maple glazed bananas
Lunch: Open omelette with fennel, cabbage and sprout slaw
Dinner: Smashed fried potatoes with stewed paprika peppers and mayonnaise
Dessert: Labneh with strawberries, pistachios and honeycomb
