I love to make carbonara. I’ve only just started making it, but have made it every weekend for the last three weeks. Carbonara goes back to Roman times and, with a bit of effort, you can make a very authentic version in 2017. It’s the perfect foodie food – you can hold wonderfully snobby opinions about pancetta vs guanciale or how much egg white to keep in the sauce. Just knowing that real carbonara doesn’t contain cream means you must really know your pasta stuff 🙂 Oh, and it’s delicious, probably not very good for you, but it is a totally luxurious, indulgent dish that I will be making for many weekends to come.
So many to chose from! I do love wild mushrooms with creme fraiche, shallots and white wine sauce with tagliatelle
Orzo in a little stock with sundried tomatoes, peas and cabbage, cheese sprinkled on top. easy and just the job when you’re hungry and want something fast
Soften a finely chopped banana shallot in a little butter with half a crushed garlic clove and a tablespoon on tomato paste and then melt in some anchovies. Take a small can of the best tuna you can get and fork it apart, then stir into the shallot mixture. Cook over low heat for another minute and then add some of the pasta water before stirring through some spaghetti or linguini with a little shredded basil. A perfect quick dinner!
It has to be my speedy Fusilli with the finest, freshest vine tomatoes, cheddar cheese and garlic. Served with hot pepper sauce of course! 🙂
Trofie with pesto, potatoes and green beans. Kinda healthy but ultimate comfort food, Easy to put together for a group – or just for me. But mostly because it reminds me of Liguria. I love all parts of Italy but Liguria feels like the land that the modern world forgot…and that’s a good thing. Its spectacular, romantic and beautiful.
I’ve been eyeing this cookbook!! I love going to Padella. My new favourite pasta is their pici cacio e pepe. At home this summer, I’ve been making a quick pasta salad of linguini, cherry tomatoes, shallots, rocket, olive oil and balsamic vinegar.
Its got to be a very naughty pasta alfredo I sometimes add spinach just to make it a bit healthier.
So difficult to choose one, but think I will go for pasta ncasciata – such a delectable combination of aubergine, ragu, parmigiano, basil and much more in a beautiful pasta bake – Sicilian food at it’s best!! My mouth is watering thinking about it now!!
As a lover of italian dishes, it’s complex to answer this question… but no one can beat a big pan of spaghetti alla bolognese. It reminds me of my childhood, the scent of meat and celery as the tomato sauce all over my mouth. I like doing these meal when inviting friends at home. It’s convivial, authentic and so tasty with a good red wine. I also try to pump up the rustic recipe by adding some diced pancetta, thyme and bay leaves to the meat preparation. And it can be a great looking dish, sprinled with old parmesan and parlsey. To be honest, i always save some sauce and freeze it for any improvised diner 🙂
So many great past a recipes, but my fav is fresh parpadelle with king prawns cooked simply with some garlic, cherry tomatoes, white wine and parsley sauce.
My favortie pasta dish is fettuccine alfredo. My grandma taught me how to make pasta and it reminds me of her. I’m the only one in the family who learned how to make the pasta so I feel a special bond with my grandma.
I’ve always enjoyed cooking/ baking. I can still remember watching my grandma and mum in the kitchen was I was a little girl.
I like to make meals from scratch as much as possible and my homemade Lasagne is a firm favourite in our house.
I use a recipe that was passed down from my grandma (She was italian). It’s delicious, if I don’t say so myself!
The best thing is, even our baby girl enjoys it, even though she seems to get more and more on her lol!
I enjoy getting the kids involved with food and hope to continue to pass down these recipes to my children and grand children in the future.
I love to make crab and prawn linguine I soften garlic and fresh chilli in good olive oil gently, add the prawns, then the crabmeat, a good glug of white wine and let it cook down/reduce slightly. Then I add the pasta and a ladle or two of the pasta water and let the flavours coat the pasta. Sometimes I add a couple of spoons of creme fraiche or some cream to the sauce, depending on what I fancy! It’s so quick and easy, perfect for a Friday night in front of the telly!
Taglioni wrapped in truffle oil and topped with truffle shavings is definitely on top of my list.
I couldn’t believe that the simplest of pasta dishes could be completely – magic. It has transformed the way I view food – putting more thought into quality ingredients and simplifying the number of ingredients to bring out the flavours of a dish. As they say less is more.
Tagliatelle with cream, peas and bacon because my now husband used to make me it when we first started dating as it was the only recipe he knew, I now make it for us on occasion

I love lobster ravioli! I also love lasagna.
Making lovely carbonate with egg yolks and garlic. The trick is a little of the hot pasta wateradded to the egg yolks.

My favourite has to be spicy prawn linguine – tomato, garlic and lots of chilli! So tangy and warming without being heavy. Love it!

Fennel, garlic and lemon zest…magic!!
I just wish we could get veg. as good as available in Italy. Then all you need is, say, some red pepper, garlic and good olive oil. We just do not get enough sun to get them sweet enough.
Keep it simple! No more than three ingredients, plus some lush oilve oil – crab, lemon and chilli is our best add to linguine
Spaghetti alle vongole is my favourite to make. I love Italian food.
Definetely the pasta with tomato sauce and italian salsicia. It’s so simple, so fast and full of italaian flavours. And taste better eaten in the sunny yard!!!
I love Italian food. Especilally vegetarian lasagne with a caprese salad.
My favourite ever pasta dish has to be the one my nan always used to make for me and the one I always make for myself now – pasta with ham, leeks and cream. It’s super simple but is finished with garlic, parmesan and black pepper to make it really flavourful.

Spaghetti carbonara are my favorite and my craving during my pregnancy. I like to cook it my way onions, mushrooms, bacon and cream with a little touch of white wine, even if it’s the wrong way as I learned during a trip to Rome that carbonara doesn’t have cream, I still love it cooking the wrong way
It would definitely have to be spaghetti bolognese, my mum has her own secret recipe which in time she will past down to me. Every time I eat it, it just makes me feel at home and safe.
My favourite is a plain old spaghetti bolognese, it’s a classic
Spinach & ricotta cannelloni – it tastes delicious and is a treat!
My favourite pasta dish is Spaghetti Bolognese (which I accept is somewhat unoriginal!). Neither of my parents were renowned for their cooking, however my mum did excel with the old spag bol, and we ate it several nights a week as kids. She was also fond of including more than a dash of wine, so it was my first taste of alcohol as a child. Therefore, I find this dish very nostalgic!
It has to be my Mum’s Bolognese, she used to send me to Uni with vats of it she she taught me to make it, which in turn helped me make a lot of friends. It involves a ridiculous amount of chopping, but it’s worth it in the end!

Spaghetti with artichokes & pesto as I just like it.
I know it’s basic and probably boring to most people but macaroni cheese has been a long time favourite pasta dish for me, it’s simple, tasty,satisfying, warming and homely, plus you can add other things into it if you really want to without upsetting the balance of delicious cheesy yummy-ness too much.
Cheese sauce with peppers and quorn pieces. Lovely
Large pasta shells the sauce is made from pancetta garlic cinnamon chilli cumin butternut squash vegetable stock with parmesan lemon and basil, warming and delicious
I love pasta with meatballs and loads of veg chucked in, it’s so so yummy.

I love roasted Mediterranean vegetable lasagne because it feels lighter than a normal lasagne and is a little different.
I do love a good ravioli there’s something quite comforting about digging into into little pillows of pasta

The pasta dish I still dream of is one I had in Firenze: just pasta & shaved truffles – heaven!
Another one I loved was in Sicily, with pistachios and prawns. Beautiful.
Or the one with a spicy ‘nduja and tomato sauce I had in Southern Italy.

Lasagne made the real Italian way, where the dish cuts like butter true Italian, not like that served in the uk,, somtimes burnt, hard to cut, have to chew rather than melt in the mouth
