Smoking is technique we take for granted. Adopted as early as when man made fire, smoking has been used to create some of the most delicious dishes and flavours in modern and ancient cuisine. As anyone who’s has smoked butter will tell you…

Although smoked salmon is a household favourite, there’s a whole world of smoking out there to discover. With seasoned food writer and chef Charlotte Pike’s new book ‘Smoked’ you can learn everything there is to know about smoking – from making your own DIY cold smoker to smoking mushrooms and trout yourself. After reading it ourselves, we’ve become obsessed with the idea.

There’s a smoked rapeseed oil I buy which I love. You can use it with anything to add a smoky flavour. I particularly like it with fried eggs or potatoes.
