Best vegan dish I’ve tasted ? The vegetable tempura (A starter. Are you sure ? So huge !) at Teresa Carles veggie/vegan restaurant in Barcelona.
My favourite vegan meal has to be carrot and cumin curry, I got the recipe from my friend who is a Punjabi cookery expert she runs her own business called scotia spice here in Scotland.
The ingredients are:
Chilli
Cumin
Coriander
Garam masala
Cumin seeds
Carrots onion
A tomato
Garlic
Ginger
Oil
Ghee
You basically bring it all together in pot and within about 15-20mins you have the best carrot curry ever.
The best vegan meal I’ve had was very recent. Home made frijolemole, delicious with a zing of chilli and lime, tomato salad with toasted almonds and coriander seed, coleslaw made with a vinaigrette dressing and loads of crusty bread.
Eaten al fresco in this lovely sunshine we are having. My daughter is vegan, so I’m always trying to think of tasty new dishes when she’s home in Lancashire from her London base
Hands down the best vegan meal I’ve ever had in my life was at Vedge in Philadelphia! 🙂 Even my meat-loving friends said it was in their top 3! Served as tapas style and two of my favourite dishes were the ‘FANCY RADISHES smoked tamari, yuzu avocado, pickled tofu, shiso, shishito’ and the ‘SSAMJANG GLAZED TOFU, edamame puree, burnt miso, cucumber, sea beans, toasted nori’. To die for!!! Will change your opinion of vegan food forever! :p
My most delicious vegan dish was one I created earlier this year. I wanted to do a plant-based cassoulet and I had the idea to do one with cabbage. It turned out incredibly delicious and unlike the original version it wasn’t heavy but simply made me feel so good. I had a hard time not to eat the entire pot myself!
Actually a concussion of my own. A vegan lasagna, including mushrooms, eggplant, a bit of potatoe, and spinach and of course a vegan, homemade passata and bechamel and vegan cheese.
On my experience I could not decide which is the best dish ever, but, the ones which make me feel great are the ones which I prepare myself with “not-for-sale” vegetables, fresh, easy and colorfully-tasty, does not matter if raw, blended, fried, grilled or any other possibility.
Even my family, not being vegan/vegetarian, love them and my grandma, whom used to include meat at every single dish, always asked me to cook for her when at home, “grilled veggies!” (miss this).
Ooh that’s so hard to choose, but I think I’d have to go with a staple red lentil dhal, with some coconut yogurt, crispy kale, rice and mango chutney. I definitely need a bit more inspiration for some new staples haha!
A Moroccan Vegetable tagine – chunks of butternut squash, carrot, courgette and chickpeas in a tomato sauce heady with cinnamon, harissa and cumin.
Caponata, a lovely aubergine stew with capers and olives – a fantastic bowl full of Mediterranean flavours!
Best vegan meal I’ve had to date was the Beet Mushroom Walnut Burger at Counter Culture in Austin, Texas.
Came with lettuce, tomato, red onions, house mayo, (yum!) house ketchup, (yum!), mustard and cashew cheese on a wheat bun.
It came with a side and I chose the mixed green salad. All absolutely delightful! I’ve been vegetarian for several years but working towards vegan… hoping this cookbook will help me along! 🙂
vegetable curry
It was in a tiny hillside café on a trip to Shimla – a vegetable curry served with a vegetable broth and freshly cooked flatbreads. Delicious – and I had change from 50p.
Best ever would be the bbq jackfruit loaded chips by far! My non-vegan boyfriend thought they were pulled pork and had to buy his own portion as I would refuse to let him have any of mine, topped with vegan homemade coleslaw too!
I love vegan brownies
and all kinds of hummus!

Firecracker Tofu!
I have never tried vegan food.
A mushroom bourguignon with bread dumplings and lots of veg I had in a vegetarian restaurant in Norwich. I have re created it and served it with puree creamy celeriac and broccoli…delish!
Vegetable Thai green curry does it every time. What else do you need?
It has to be tofu karaage! It’s equal amounts naughty and nice. Bursting with zingy flavours from garlic and ginger, salty from shoyu, a kick from the mirin and then full of fatty crispiness from frying it in oil. Seriously, I could eat buckets of this. The key is to freeze the tofu first so it gets a spongy texture.
At a barbeque, recently, we had these amazing sweet potato and black bean burgers. They were delicious!

The best vegan meal I have ever tasted was a superfood salad made with quinoa, broccoli, different nuts, avocado, salad and a herby dressing.
Has to be a beautiful roasted cauliflower and chickpea salad my Mum made for Sunday lunch last week – yum!
