Sumac is my favourite Middle Eastern ingredient! I love it tart, lemony unusual taste.
My favourite is Preserved Lemons

I love anything rose, so my favourite ingredient is rosewater! I also love a sticky, sweet medjool date!
Pistachios, I love them on Baklava (that’s the main reason…hmmmm baklava) and I love to buy a bag of them for snacktimes…. In fact, I think I’ll buy a bag of them at lunch. 🙂

Currently my favourite ingredient is pomegranate seeds, sprinkled over spicy cous cous to give a burst of sweetness.
Ras El Hanout – a blend of all the beautiful flavours of the Middle East.
My favourite has got to be cardamom – cardamom brownies are my signature dish!
It’s really hard to decide.. saffron, cardamom, orange blossom water, nigella seeds & mastique.. succulent dates & all types of thick, tangy or sweet molasses..pomegranates, mulberries, green almonds, fresh pidtachios.. it’s important to know where & when to use each ingredient! But the winner has to be SESAME.. this one ingredient that does magic to hummus, bread, falafel & so much more! It comes from pretty flowers too 🙂

Trying to think what my favourite middle eastern ingredient is and realised I really don’t know that much about middle eastern cookery. That’s why I really need this book. It looks full of Eastern Promise! If I have to leave an answer I will say grilled aubergine as it works well in any cuisine!
Tahini! Though it’s close one, so many beautiful ingredients to choose from!

Cardamom- so versatile in savoury dishes with its unique taste but also in desserts such as a chocolate and cardamom tart. It always surprises our dinner party guests.
Zatar is my favourite ingredient, it is so versatile, Ottolenghi has a stunning chicken dish which contains Zatar, it is is absolutely stunning! So tasty!
