Spanish Chicken
Chicken thighs, chorizo, new potatoes, peppers, with plenty of fresh oregano and zest/juice of fresh orange over the top. Delicious! There are so many options, No potatoes, extra veg but with either couscous or garlic flatbread.

Any type of chicken sausage, sliced fennel, and sliced apples. I mix everything together with some olive oil and apple cider vinegar, salt and pepper. The smell alone while it roasts is amazing!
Roasted vegetables with balsamic vinegar and thyme – simple but a wonderful flavour sensation!
Pork, parsnips and pears! Sometimes switched to lamb.

I use my roasting tin for everything, probably because I have very few other pans. But lately in my go to meal has been oven egg and chips and variations of. Just chipped potatoes (sweet or regular) tossed with oil and spices (za’taar being a favourite lately) roasted intil nearly done. The crack an egg directly onto the roasting tin for 5 1/2 minutes. Cheap, cheerful and tasty!

I love to make Moroccan spiced chicken with roasted vegetables. It is SO tasty and so easy which is my favourite combination!

I absolutely LOVE doing a brisket ragu. So easy and tasty – always a winner!
My grandmother’s Moroccan slow-cooked lamb shoulder, with lots cumin, coriander seeds, ras-el-hanout, garlic, rosemary, fresh coriander and a bit of stock. I still cook it regularly today and every time the enticing smell reminds me of her.
Sausages with potato, pumpkin and red onion. You can use any good quality sausage and top it with hearty herbs and even haloumi! So simple and delicious.
It has to be Roast Potatoes. They are delicious.

It’s got to be slow cooked greek lamb with macaroni.
You stud a leg of lamb with garlic cloves and mint and then chuck it in the roasting dish with a tin of tomatoes and some w
ater. Cover and slow cook and then add dried macaroni and lots of dried mint for the last 40 minutes or so. The lamb falls apart and the pasta soaks up all the flavours. So good!
Roast beef, rather boring really, that’s why I think I need to win the book.
My go to recipe for a tray bake is fennel & ricotta bread pudding. I’d never tried savoury bread pudding until i saw a recipe in Claire Ptak’s book. Since then i’ve tried many variations but this is my favourite.
My favourite dish for my beloved old roasting tin is a tomato, broccoli and cheese pasta bake.

Morrocan chicken, harrisa and pistachio traybake has got to be my all-time favourite!

Not creative at all but I do love roasting vegetables in a roasting. Whether it is potatoes, carrots, Brussels sprouts, they just need some oil, herbs, chilli and lemon juice on them and they are good to go 🙂

Chicken marinated with chopped rosemary, cracked black pepper, salt and a little bit of fish sauce. marinate overnight and bang it the oven until the chicken is cooked through.

I’m a big fan of a chorizo and chicken tray (chicken, chorizo, red and yellow peppers, red onion with oil salt and pepper and paprika over the top) it tastes so good!!!

Sausage bake, using chicken sausages and any root veg I have to hand, finished off with a pesto glaze.
I love to cook spatchcock Indian chicken in my cast iron roasting tin. Potatoes are added half way through cooking time, & once the chicken is cooked & left to rest. I put the same cast iron roasting tin straight on the hob to reduce the sauce, throwing in a bag of spinach at the last moment. A real one pan wonder!

Roasted Mediterranean vegetables
My favorite meal to makein my tin is roasted leg of lamb over Greek style potatoes.
My favourite dish to cook in a roasting tin – apart from roast potatoes! – is baked gnocchi with kale pesto, roast tomatoes, pine nuts and a crispy cheese topping. It’s lush! And so easy. I love one pan meals so this cookbook sounds great!

Cooking in a roasting tin involves any food that is on sale. My sister and I are university students so we have to get pretty inventive with the dishes we make in the tin. There isn’t a ‘staple dish’ but more of a ‘staple method’.
So our favourite dishes to make are money savvy 🙂
Good old roast dinner
You can never go wrong with a roast chicken. I like to put butter, lemon and thyme under the skin to keep it nice and juicy.
I love to cook a good roast dinner, the kids love roast pork and crackling.
I also love to roast vegetables (courgette, carrots, beetroot, parsnip, carrots, leeks, cauilflower) – and then add them to some rice, some homemade pesto and if I have any, a home made pickled egg. Yum!

Chicken, leek, cheese and slow roasted tomato, puff pastry bake. Absolutely delicious served hot straight away, or cold the next day with a generous dollop of (ahem…..) HP sauce!

I’m not sure what it’s called, but my grandmother is palestinian and she taught me to make a dish of layered onions and chicken breast with olive oil and a liberal amount of sumac, served with a little lemon and on top of rice with vermicelli. Is a stunner.
