This week we spoke to Charlotte Faure, trainee nutritional therapist with one hell of an Instagram full of recipes. Find out more about her inspirations, can’t-miss things to do in Brighton and her latest adventure.

A little about yourself & what you do?
“My name is Charlotte and I live at home in Brighton with my husband, Stephen, and our seven month old son, Zephyr. I’m taking time out of my usual role of managing the lives of the high-profile super-rich, and studying to be a nutritionist part-time, to be a mama to a tiny and awesome little dude. I’m currently trying to get our lives in order for a ten week adventure around SE Asia – trying to squeeze the most out of maternity leave!”

Where in the world do you live?
“By the sea in Brighton, in the UK. I’ve been here for over 12 years now, since university. I’m originally from Solihull, and whilst I love visiting home, I can’t imagine living anywhere other than Brighton in the UK.”

One or more places you have to visit there?
“The beach, of course! Autumn is my favourite time for a blustery walk along the seafront, you get amazingly coloured skies at sunset. In May each year, Brighton hosts the Brighton Festival, Europe’s largest arts festival. It spans almost a month and there is so much to see and do. Brighton really comes alive then, so bustling, and it really marks the start of summer for me. I feel so proud of our tiny city over that time.”

What do you khoollect?
“Recipe books. I’ve got a bit of a problem, frequently hiding new purchases from my husband, “oh, this old thing, I’ve had it for a while”.”

Favourite recipe?
“This changes all the time, but one constant is my mum’s pickled cucumber salad. It lifts any curry as a side dish.”

Favourite book?
“I don’t know how I can pick just one? So hard! A Fine Balance, by Rohinton Mistry, will always stay with me.”

Favourite local coffee shop?
“The Flour Pot on Elm Grove.”

One item you can’t live without?
“My phone, sad as that is, it’s my lifeline.”

Perfect day off?
“Finding time in the morning for meditation and either a gym session or yoga practice at home, a breakfast involving avocado and eggs, a good coffee, drive out to the countryside for a walk on the South Downs or a mooch in Brighton’s North Laine, warm fire and glass of red wine, settling in for the evening with my husband and little boy, an hour cooking in the kitchen with some tunes on. My perfect day would be at a slow pace, with my two favourite men.”

Who inspires you?
My great friend, Sara. Post chemotherapy, she has evolved into an amazing campaigner for cancer awareness and end of life choice. You can follow her campaign on Twitter and Instagram, @fizzysnood.

If you weren’t an X, what would you be?
“A nutritionist, so I’m training to be one.”

Celebrity/icon you’d most like for dinner?
“I’d rather the opportunity to get together with my friends as babies make that hard. I love cooking for friends and sitting around a table with them.”

Best advice you’ve ever received?
“Money is transitory, it comes and goes, memories stay with you forever. Thanks mum!”
