Meet the Khoollect cooks: Marija Khoo of Vanilla Salt

On Monday 2 January we will be launching a very special cookbook in collaboration with Hellmann’s, Maille, Knorr and Colman’s, featuring recipes for you to try at home and share with your loved ones. Providing fellow cooks each with an individual ingredient, we have called upon our Khoollect cooks to create a recipe for the cookbook.

One of these cooks is Marija Khoo, the creative cook behind Vanilla Salt. We sat down with Marija to discuss all things food, and of course, what she will be sharing for our e-cookbook with Maille Dijon Originale Mustard.

Tell us, what recipe will you be sharing in the Unilever x Khoollect e-cookbook?

A lovely savoury recipe for a dreamy Sunday brunch: fluffy egg clouds. 

What do you love about this dish; why did you choose this particular recipe?

I am majorly obsessed with eggs, and these light airy, meringue-like clouds topped with oozy rich yolks are a brilliant way to present eggs and yet very simple and easy to make.

What’s your go-to weeknight meal?

A good bowl of belly-warming creamy tomato soup with crusty bread. Korean tuna pancakes with tangy lettuce and green onion salad, or fresh mozzarella caprese with pesto dressing. Always fool-proof, very satisfying and they get the job done perfectly.

And your favourite comfort food?

Apple and plum crumble pie has a very special place in my heart.

What dishes will you be sharing with your nearest and dearest during the festive season?

I’ve got a ridiculously ambitious plan up my sleeve for Christmas dinner. I want to combine my family culinary heritage with my partner’s festive eating traditions. I am thinking of 12 dishes on the table concept (Lithuanian Christmas tradition) featuring flavours from Russian, Austrian, Malaysian, French and finally British cuisines. It will be fun to experiment and I feel it’s very befitting for our London life.

What’s your best piece of cooking advice for the novice cook?

Start with simple meals. Simple meals are just as filling as anything gourmet!

What have you got planned for 2017?

Going back to the basics of eating. Our family is expecting a new arrival in March 2017. It goes without words that we are very excited.
