I love quick recipes, especially during the week when both my hubby and I are very busy.
A firm favourite of ours is chicken with mayonaisse and chutney.
You will need:
1kg chicken portions
Half cup mayo
Half cup fruity chutney
Place chicken in a bowl. Mix the mayo and chutney together and pour over chicken. Mix, making sure the chicken portions are well coated. Pour out onto a well greased baking tray and bake at 180°C for 45 minutes.
Serve with new potatoes and green beans.
I would love to be able to give you a recipe of mine but I am just useless when it comes to cooking so this book would be ideal for me.
Spaghetti Carbonara is an easy three ingredients meal. Spaghetti, bacon bits, egg.
I am so sorry, but I have no recipes with just three ingredients. I am intrigued to see what can be done. Are mayonnaise and chutney allowed, as they have more than three ingredients in their make up? Salt, vital for flavouring needs to be one ingredient I most recipes, so you are almost down to two. I am intrigued

My Favourite 3 ingredient recipe is Raspberry icecream : 300g Raspberries (Pureed) 300l Double Cream and 140g sugar, makes about half an litre Tastes of the Summer. Everything in moderation of course
Being half Italian, a basic pasta sauce is instilled in you from an early age!

Olive oil
Fry onions in oil on low heat, until transparent; add tomatoes and bring to boil and then simmer on low heat until reduced.
Obviously, you can add other ingredients but once you have the above down pat..you will never go hungry again (maybe Scarlett O’Hara knew this recipe!)
Parsnips and shallots baked on puff pastry,
serve with watercress, green been and almond salad
Keeping it simple with fresh homely make gnocchi and a sage butter sauce. Only a small amount of ingredients but its packed with flavour

A stir fry of halloumi, red onion and red/green peppers.
My super speedy courgette ‘spaghetti’ requires courgettes (thin strips), a lemon and some olive oil. so simple , yet so delicious ..Bon appetite 🙂

Onion and Smokey bacon fried off in a pan. 1 tin of chopped tomatoes with garlic. 1 jar of Lloyd Grossman Putanesca sauce. 1 chopped potato. 1/2 pint of water. 2 heaped tsp of vegetable bouillon. Blitz smooth after 30 minutes cooking. Delicious xx

As my kids don’t like cheese I make a variation of Hunter’s chicken with these 3 ingredients
Chicken breast (1) Slathered in BBQ sauce (2) tightly wrapped in bacon
My fave quick and easy meal is loaded potato skins, all u need is potato, cheese and bacon, perfect for a very quick, filling meal and everyone loves them.
There very easy to do, just bake your potato, while that’s baking fry up some bacon and cut it into small pieces, then when the potato is done cut it in half and scoop out the inside and mix it in a bowl with the cooked bacon, then refill the skins and grate some cheese over the top, then put them in the oven and let the cheese melt, then enjoy!!
Im rubbish at making things from scratch, im guilty of cooking and throwing together frozen food, not good for me and 2 young children so this would be amazing

My favourite baking recipe which only has 3 ingredients is upside down pineapple cake. It is literally a tin of pineapples in there juice with a cup of SR flour and a can on lemonade all mixed together then placed in a cake tin and cooked. its so tasty too!

I’m gluten and dairy free – an easy meal for me is a creamy tomato with bacon spaghetti dish.
Gluten free spaghetti
Chopped tomatos
Bacon
Soya Cream
(lots of chilli for the other half)
Cheese and pate butty
Pate – Brussels
Cheese and onion crisps – crinkled for extra texture
Thick white bread
Ice cubes 1 ingredient water!
Cheese and onion waffle
For each one:
1 table spoon of instant mash
1/2 teaspoon of garlic powder
Sea salt to taste
Ground pepper to taste
12g cheddar cheese
2 spring onions chopped up fine
Make up the instant mash, put 1 table spoon of the mash in a bowl and add the cheese, spring onion, garlic powder and seasoning- mix altogether.
Grease waffle maker with cooking oil of choice and heat up.
Place waffle mixture in the waffle maker, press down to distribute evenly and cook for about 10 mins – keep checking as it may cook sooner or take longer depending on your waffle maker.
Stop cooking once golden brown and enjoy (let cool down a little first as hot as lava!)

Marmite pinwheels – 320g sheet ready rolled puff pastry, 10g marmite, 1 whisked egg.
Prehat oven to 220C/200C fan/gas mark 7. Roll pastry out onto a board. Spread whole of pastry with marmite. Roll pastry up lengthways, like a swiss roll. Use a little egg wash to seal the edges together. Cut the rolled pastry into 1.5cm thick pieces and place on baking tray lined with greaseproof paper. brush a little egg wash over the pinwheels. Cook for 15 minutes until golden and serve hot or cold.
Muffins toasted tuna and mozzarella
Ingredients: Large Lord Lambourne or Blenheim Orange apples, Dorset Cereals chocolate cherry granola, soft brown sugar and water. Core apples, place on bed of brown sugar in an openproof dish, stuff with the granola mix add a teaspoon of brown sugar on top. Put a little water in the bowl. Place in oven at around 180 centigrade for around 30 minutes or until cooked. The sugar will meld with the water to form a beautiful sauce. Serve with ice cream or custard with the sugar sauce over the top. Beautiful.

dip in beaten egg
toss in fresh breadcrumbs
Shallow fry in pan till golden brown
serve with salad & new potatoes
You can make Nutella brownies using just eggs, flour and Nutella
I absolutely love stir fried rice with egg and any veggies to hand plus sweet chilli sauce! Simple and delish!

roll out pastry onto lined tin and put in fridge for 30 minutes
Prick pastry with fork add tomatoes and mozzarella cheese, season and bake for
25 minutes. Quick easy and very tasty
I love to make nutella brownies using nutella, eggs and flour!
Double cream, castor sugar and lemon to make a fresh lemon posset put the sugar and cream in a pain bring to the boil then simmer gor further 5 mins take off heat leave to cool then add in zest and juice of the lemon then place in fridge to set
jacket potato, scoop out some of the potato put in a egg sprinkle some black pepper put back into the oven until how hard you want your egg, then enjoy
Eggs milk and bacon make a lovely omelette!
Goats cheese parcels – pastry, goats cheese and cherry tomatoes xxx
I use peanut butter + sugar + eggs to make peanut butter cookies
Pasta , tuna and sun-dried tomato sauce
Spicy Corned Beef Hash is tasty, filling, cheap and very simple. Dice potatoes and onions, cook in a pan until softish, add sliced peppers and chilli powder, cook until it suits your taste. Top with cubed corned beef, drizzle oil spiced with a bit more chilli powder, and grill until sizzling..
Tin of baked beans, tin of chopped tomatoes, 4 pork sausages- mix all together and cook in the oven for about 30 mins at 200C for a lovely sausage casserole.
Darcey’s Delights (Cookies)
This is my go to recipe for a quick, simple and healthy treat. It’s also gluten and dairy free working well for those with allergies. I call them Darcey’s delights as they were originally made as a play date snack for my daughter’s best friend. Super easy to whip up in an emergency when you have three hungry pre schoolers, one of whom is dairy intolerant.
Ingredients: 100g porridge oats
3 bananas
A handful of raisins
Method:
Preheat the oven to 180C (160 fan). Mash the bananas and add the flour and raisins. Mix till evenly distributed. Dollop spoonfuls on a baking tray lined with parchment and bake for 12 minutes till golden.
If another ingredient is allowed, I like to dip half these biscuits in dark chocolate to make it even more special.
Note: these cookies do discolour because of the banana content – best eaten on the day of making.
My delicious creamy prawn pasta… Linguine…. Double Cream/Creme Fraiche and Prawns pan fried in garlic. Mix it all together – done – so yummy x

Makes welsh raebit
My mum’s delicious fruit cake –
1 kg mixed fruit,
500ml fruit juice or cold tea; and
350g self raising flour.
You soak the fruit in juice or tea overnight. Then in the morning you stir the flour into the soaked fruit and mix well. Put in a lined 22cm cake tin and bake for 2-2.5 hours in the bottom of the oven until cooked through. Remove and leave to cool.
I have a really quick and simple recipe for pancakes. You will need the following: 1 banana, vegetable oil (a couple of table spoons) and 2 eggs.
First beat the eggs. Then smash the banana with a fork. Next mix the eggs and banana together. Finally add the vegetable oil to a frying pan and pour the pancake mixture on to the pan. Make sure it is lightly browned on one side before flipping it over to the other side. The cooking time shouldn’t really be that long.
Onions sweated until really soft then add some juicy ripe tomatoes and let them break down and become sweet. Simply season with any herbs like basil or oregano and add some capers or olives then serve with chunk of fresh bread or even some pasta. So easy and versatile. It can be elevated with thinly sliced peppers or artichokes, and tastes delicious with shavings of parmesan or goats cheese. My super simple take on a ratatouille.
Ours is a regular that we call Chocolate Smush (rhyming with push). Raw cacao powder with frozen banana blasted in a powerful blender. Like chocolate ice cream with a hint of banana.
I process 8 almonds in a small food processor, I then add 2 dried dates that have been soaked for 5 minutes, and a sprinkle of sea salt. I then process again. I take the ingredients out of the processor and form it into a ball with my hands, and this tasty and yummy energy ball is my breakfast, or I sometimes take it to work in a jar for a snack!
I’ve recently discovered homemade barbecue sauce. Always strenuously disliking shop bought bbq sauce I have just always avoided it. However, this week I made a chicken dish that required bbq sauce and so looked for a recipe online.
This seriously changed my life! 3 ingredients and the sauce is so delicious.
1 and 1/2 cups tomato ketchup
1/4 cup prepared mustard
1/4 cup brown sugar
You could add all sorts of things to this, but basically that’s it.
Delicious, fresh homemade pesto! I chuck in basil, good olive oil and any vegetable tops I have in the fridge. Delicious on fresh pasta!
My daughter and I make amazing peanut butter cookies that contain just peanut butter, egg and brown sugar. Yum! 🙂
I like chicken and mushroom omelette.
Lemonade scones
This recipe can be made with or with out dairy.
Using the cream carton as your measure add to a bowl-
1x carton of cream (or dairy free alternative)
Refill carton 1x lemonade
Refill carton 3x Self Raising Flour
Mix gently then pat out on to a work surface and using a scone cutter, cut out scones, bake in oven gas 6-7 for 14 mins.
Optional – add sultanas for fruit scones
Optional – swap lemonade for soda water and add cheese for cheese scones.
My favourite simple recipe is roasted garlic pasta – a whole bulb of roasted garlic, black pepper and olive oil blended together then slathered over fresh pasta, delicious!
Boiled spaghetti, glugs of olive oil, crushed cloves of garlic.

frozen banana ice cream with nutella and peanut butter
No-bake traybakes are a fave – Fifteens! 15 digestive biscuits (crushed), 15 large marshmallows (sliced), 15 glace cherries (sliced) and some sweetened condensed milk. Mix the lot, flatten into a baking tray, and chill for a couple of hours (you and it!) Then slice up and enjoy. Xx
mine is simply pork loin steaks baked in the oven with baby new potatoes and sliced green beans
Have just made a roasted vegetable soup – peppers ,onions, carrots and tomatoes roasted in the oven and blended with stock and seasoning. x

Today I made vegan gluten-free pancakes – because I did not have any regular flour in the house, and I’m vegetarian but trying to cut down on eggs and dairy.
I used the following:
the liquid from a can of chickpeas (which I had used to make hummous) whisked until frothy, 2 heaped tablespoons of self-raising gluten free flour, and enough soy milk to make a loose batter.
After mixing together, let stand for 10-15 minutes, then heat coconut oil (or butter if not vegan) in a pan. When hot, add a ladleful of batter mix to pan and swirl to coat base of pan. The batter takes a bit longer to cook than normal pancake mix, and is somewhat delicate because of lack of gluten, so leave it to cook on high heat until the batter comes away from the pan at the edges, then flip with a spatula and cook the other side. serve with lemon and sugar or pancake topping of your choice.

I love chocolate, me and my daughter love baking and experiment with various ingredients. We made chocolate pancakes using banana, milk and chocolate, yummy.

Indian scrambled or omelette egg.

Masala (garic, green chilli, ginger blended into one item)

mix egg with ingredients, heat oil up, make omelette or scrambled egg as desired
One of my favourite recipes is homeade flapjack… I use butter, sugar, golden syrup, oats and melted chocolate to drizzle on top. It makes a great filling snack.
Mushroom omelette – eggs, milk and mushrooms – quick and healthy
I just like a simple Omelette with a 25g cheese, 4 eggs and spring onions. I’m on slim fast at the moment so this works for me and is filling. But I love simple yummy foods that can be cooked without buying the whole supermarket!
A quick snack I like doing uses tortilla wraps, pizza sauce and cheese. Pop a tortilla in a frying pan for a minute, turn over and top with the sauce and cheese, pop another tortilla on top and flip. Cook until tortilla crisp and cheese melted 🙂 simple student snack
My favourite cheat crumble – packet of frozen blueberries combined with a tin of peach slices in syrup, topped with a crumble (flour/butter/sugar). Couldn’t be easier
