East London eatery Morty & Bob’s are best known for their legendary grilled cheese sandwiches. But, the delicious food on offer doesn’t stop there. Tasty breakfast, lunch and dinner dishes all grace the menu, giving the diner a hearty array of seasonal-focused dishes to choose from. When Khoollect stopped by, we sampled this delicious carrot salad and had to get the recipe for ourselves.

ingredients

The Salad

2 orange carrots

 

2 purple carrots

 

1 beetroot

 

1 tbsp sunflower seeds

 

1 tbsp cumin seeds

 

100g (1 cuo) goat’s cheese

 

Small handful of micro parsley (or normal parsley)

 

 

The Dressing

1 tsp mustard

 

1½ tbsp vinegar

 

1 tbsp honey

 

3 ½ tbsp olive oil

Salt and pepper to taste

Preheat the oven to 250°C/480°F. Wash and top the carrots and cut into rough pieces (not too small).

Place the carrots in an oven or baking tray and toss with oil. Sprinkle with cumin seeds, season and roast until just tender.

Peel the beetroot and cut into thin discs (using a mandolin if possible), then cut each slice in half.

Crumble the goat’s cheese into large chunks. You can do this by cutting it into slices and breaking these up carefully.

Toast the sunflower seeds in a low oven until golden.

Mix all the ingredients together gently so the goat’s cheese doesn’t break up too much Garnish with extra cheese, sunflower seeds and freshly chopped parsley.
