There are fewer treats in the world more fun than a fluffy marshmallow. And, having trained in the art of sweet-making in Paris, Oonagh Simms has brought her talents and marshmallow-making skills back to London. With the release of her new cookbook The Marshmallowist, she’s now sharing her tips and tricks with the wider world. If you’d like to learn to make marshmallows for all occasions, good news: we’re giving you the chance to win one of three copies.

It’s summer… and we’re about to have a bonfire… so I’m thinking toasted fruity marshmallow.

Marshmallows are the only things I can make perfectly! But at the moment I struggle for inspiration and always make vanilla flavour! I love making them and taking them down to the beach at sunset to have round a campfire!

I recently made my first marshmallow and I’m hooked. I was always so afraid to try – something about using that candy thermometer! – but I know now that I’ll never buy another store brand marshmallow again. I’m in love with the versatility. My first batch, I made them in the shape of hearts. I’ll never go back!

Two years ago, I was an au pair for a lovely family in France and the dad did homemade marshmallows all of the time! I would love to be able to experiment and bring back memories of that fabulous summer. It would also be great to send some of my creations over to them!

Treats that are gluten free are always a winner! My favourite has to be rosewater, caradom and crushed pistashio!! This is a must buy for my cookbook collection!!!
