The Khoollect Squad Series: Vanessa Fletcher

***Rachel Khoo would like to thank all the inspiring people who helped make the Khoollect studio a hive of creativity. Although the Khoollect studio’s doors have now closed, you can keep up with Rachel’s newest adventures on RachelKhoo.com and on Rachel’s Instagram and Facebook pages – and, continue to enjoy the Khoollect website’s stories and recipes, which will remain available.***

The Khoollect Squad Series is a chance for us to introduce our community to our most-loved digital stars — the bloggers, Snapchatters and Instagrammers  — who are setting the pace on and offline. This squad is online, on point and, now, on your radar too. We think you’ll love the worlds of #thekhoollectsquad as much as we do.

This week we chew the fat with long-time Khoollector and one of our favourite recipe contributors, the fabulous Vanessa Fletcher. We’ve been cooking her delicious recipes for a while now, so we wanted to discover more about the Melbourne-based cook behind Fletcher Journal. Here’s what we discovered …

Where in the world do you live? Melbourne

What do you #khoollect? Cookbooks, recipes from family and friends, postcards from travels, and scarves – I love a good scarf.

What’s your favourite recipe? Homemade pasta; it was the first thing I learnt how to make and I still use the same recipe: two big handfuls of 00′ flour, a pinch of salt and two eggs (in our family, a lot of recipes call for a handful or a pinch).

What’s your favourite book? Favourite? Yikes, so hard to choose a favourite. Perhaps it would have to be Quiet, by Susan Cain, it seriously changed my life. I also really love the Geometry of Pasta by Kaz Hildebrand and Jacob Kenedy, Florentine by Emiko Davies and of course Little Paris Kitchen by the divine Rachel Khoo.

What’s some of the best advice you’ve ever received? Think of your ‘daily energy’ as a pie, and only give away slices to people to deserve them. Most importantly, remember to save enough pie for yourself each day because you need to eat.
