This taco mix is a deliciously light and easy filling that goes perfectly with crispy spiced taco shells. It’s ideal for using up that jar of tahini and makes a great veggie meal for yourself or your vegetarian visitors. The nutty tahini is a match made in heaven when paired with the acidity of lemon and crunchy veg.

Tip

  • For the carnivores out there, add leftover shredded meat to bulk out the meal.

4 taco shells

2 carrots, peeled into ribbons

1 avocado, de-stoned and sliced

Handful of radishes, cut into quarters

Handful of watercress

 

Tahini dressing

1 lemon, juiced

2 tbsp olive oil

1 tbsp tahini

1 garlic clove, finely minced

Salt

Prepare the vegetables.

Mix together the ingredients for the dressing.

Taste for seasoning and add more salt if needed.

Lay out all the ingredients on plates or in bowls, allowing diners to assemble their own taco as they please.
