Eggs are a popular snack, especially at breakfast. Egg-only themed London eatery Egg Break reveals the secret to whipping up its ‘broken eggs’ – a delicious take on traditional scrambled eggs. This recipe elevates the humble egg to loftier heights, brightening up your breakfast table with a scrumptious combination of chorizo, chopped shallots and Greek yoghurt.
Tips:
- If you can’t get your hands on scamorza cheese, mozzarella will work just fine.

Broken eggs
Heat two tablespoons of olive oil in a pan.
Once heated, add the chorizo and chopped shallots and fry until the shallots turn golden.
In a separate pan, heat the eggs, add scamorza and start to lightly scramble the mixture.
Slice the beef tomato in half and place under a grill until cooked.
To plate the dish – place the beef tomato on top of the scrambled eggs, top with Greek yoghurt, sprinkle with shallots and serve with a slice of sourdough.
