In the kitchen with Eleonora Galasso

If you’ve read our interview with and guide to Rome from Italian food interpreter and cook Eleonora Galasso, you’ll have discovered that this multi-talented foodie fosters a life-long passion for the cuisine of her home country.

The Khoollect team was lucky enough to have Eleonora pay a visit to London and whip up a delicious lunchtime feast for five. A calm presence in the kitchen, Eleonora prepared a large array of Italian dishes from her beautiful cookbook: As the Romans Do. And, of course, the team was happy to devour the rice-stuffed tomatoes with rosemary potatoes, summer stew (vignarola), bruschetta and artichoke salads she served up. It’s a hard gig, we know, but someone’s got to do it…

We had a chat to Eleonora live on Facebook (you can check out two videos here), and discovered the inspirations behind her book and love of Roman food. Needless to say, it was a tough day in the Khoollect office.
