This smashed pumpkin bruschetta is a great recipe for using up the leftovers lurking in your fridge. So quick and easy to prepare, you’ll be glad to have this up your sleeve the next time you have visitors pop over.

Smashed roasted pumpkin bruschetta
Rub the slices of bread with garlic. Place under a hot grill, along with the bacon.
Grill both until golden, then remove from the oven.
Once again, rub the garlic clove on both sides of the bread to increase the subtle garlic flavour.
Using a fork, roughly mash the pumpkin in a bowl then spread on top of the bread.
Chop the bacon, and scatter on top of the pumpkin along with some feta.
Drizzle with olive oil and garnish with chives
