These little potato canapés can be adapted to host just about any topping. Get creative – just about anything goes with these morsels. The perfect easy-to-prepare snack for your next dinner party of alfresco barbecue.

Petite potato canapés

ingredients

20 baby potatoes, scrubbed clean (allow 5 per person)

Salt

Suggested toppings

Smoked salmon with cream cheese and grated lemon zest

Half a boiled quail egg (boiled for two minutes) on a little crème fraîche, with pepper and sea salt

Roast ham with mustard mayonnaise (mix ½ tbsp each English mustard and mayonnaise)

Salmon caviar with crème fraîche and fresh dill

Sunblush tomatoes with cream cheese

Bring a pot of salted water to the boil.

Add the potatoes and boil for 8 minutes or until tender. Drain and place in the fridge.

Once the potatoes are cool take thin slices off the bases and tops so they sit flat.

Place on a serving tray and top with your garnishes of choice.
