Cheesecake is one of those classic dinner party staples – creamy, delicious and can be decorated with all manner of toppings to create a beautiful centrepiece. When running short of time, this cheat’s version gives you all the flavour, with minimal effort.

Tips

  • Thin biscuits tend to go soggy quickly, so prepare these cheesecake bites just before serving.
  • Use different flavoured biscuits to vary your end result – a coconut or ginger biscuit makes for a nice change. Or keep your biscuits plain and vary the type of fruit curd you use – lime, raspberry, passionfruit, orange, or even grapefruit makes a nice alternative.
  • Change the shape of piping nozzle you use and get creative with the decorating process.
  • If you don’t want to buy piping bags, you can make your own with basic items from your kitchen.

250g (1 cup) cream cheese

1 heaped tbsp ricotta

 

100g (½ cup) lemon curd

20 thin biscuits

Equipment

Piping bags and nozzles

Beat the cream cheese and ricotta together.

Place in a piping bag with fluted nozzle attached.

Pour the lemon curd into a separate piping bag.

4

Pipe the cream cheese mix onto the biscuit, followed by the lemon curd.

5

Eat immediately.
