Recipe: chia seed bircher muesli

Wellington eatery Prefab is a haven of house-made delights – coffee roasted on site, artisan breads and other delicious baked goods fresh out of the oven, and a breakfast menu carefully curated using locally sourced ingredients. One of the least suspecting and most surprisingly delicious items on the menu is a simple chia seed bircher muesli. A combination of basic dry ingredients is allowed to steep overnight in a wholesome elixir – it then turns, as if by magic, into a rich heavenly delight, care of a small handful of chia seeds. When you eat this dish at Prefab, it’s the addition of their own clotted-cream-consistency, smooth as silk coconut yoghurt that really makes this bircher sing.

Chia seed bircher muesli
Prepare the bircher the night before you plan to eat it: mix together the oats, almonds and coconut thread.
Combine the water, coconut cream and almond milk, then and add to the dry mix. Stir to combine, then sweeten with honey to taste.
Add grated apple and stir in the chia seeds. Leave to rest in fridge overnight.
Divide the bircher evenly into five bowls. Decorate with edible flowers and seasonal fruit.
