Recipe: Vanessa Fletcher’s super sweet berry and apple Valentine pie

Super sweet berry and apple Valentine pie
This is a super-easy pie to make. You’ll see the filling is relatively simple and doesn’t require any additional sugar apart from honey; the fruit is quite sweet already. If you don’t have much time, you can use premade pastry sheets instead of making pastry from scratch.
Start by making the pastry. Sift the flour and sugar together, then in a food processor blitz with the butter until it resembles breadcrumbs.
Transfer the mixture to a mixing bowl and with a knife, stir in the egg yolk and a couple of teaspoons of water if needed. Too much water will make the pastry crumbly, so only add one spoon at a time.
After this, bring the mixture together with your hand into a dough ball, wrap with cling film and rest in the fridge for 20 minutes.
While the pastry is resting, making the filling. In a mixing bowl, add all of the filling ingredients together and combine well.
Take the pastry out of the fridge and divide in half. On a flour-dusted surface, roll out two discs, one each for the bottom and top of the pie.
Line the baking dish with the bottom piece. Let the pastry hang over the edges. It helps to create a seal when you add the top layer.
With the piece for the top, use cookie cutters to cut out some sweet words –’ I proper fancy you’, ‘I like you berry much’, ‘make pie not war’, whatever takes your fancy.
Place the pie lid on top sealing the bottom and top edges together, cut away any excess. Lightly whisk one egg in a cup for a light egg wash.
Into the oven for 30 minutes at 180 degrees Celsius and that’s it. Serve with a generous scoop of vanilla ice cream.
